Fall Weather Honey Apple Tea - Tea Blend of the Month

Apples are everywhere this time of year and I have been working on several apple recipes to share on instagram (@backyardpatch43) when I found this item I shared on an old website back in 2011. With some updates, this makes a great tea to enjoy the flavor of apples.

Honey Apple Tea 

  • 4 black tea bags (or 4 tsp. loose black tea)
  • 1 tsp dried chamomile (optional)
  • 1 tsp dried lemon balm
  • ½ tsp dried sage
  • 1/3 cup honey
  • 3 cups unsweetened apple juice
  • 3 cups boiling water

In a two quart pot, brew tea bags and dried herbs with boiling water.  Steep 2 to 5 minutes.  Remove bags/tea infuser or strain if brewed loose.  Add honey and apple juice.  Stir well.  Serve warm with a slice of apple or a cinnamon stick or pour over ice.  Makes 4 servings.

Apple Bread - Weekend Recipe

I like this apple bread because it is perfect to make in the winter, with warming cinnamon and easy to get Gala or Braeburn apples you can make it easily even in midwinter. It is great to spread with honey or butter and have for a weekend breakfast.



Apple Bread

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon (or use BYP Cinnful Dessert Blend)
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • 1/4 cup honey
  • 2 tablespoons vegetable oil
  • 1 1/2 cups Gala or Braeburn apples, peeled, cored, and cut into 1/2-inch cubes
  • Powdered sugar for dusting, optional


Directions

Preheat oven to 325°F. Grease and line a standard-size loaf pan with parchment paper. In a bowl, stir together flour, baking powder, cinnamon, and salt; set aside.

In a large mixing bowl, whisk together applesauce, eggs, vanilla, brown sugar, honey, and vegetable oil. Whisk vigorously until mixture is completely homogenous. Add dry ingredients and whisk gently until just combined, being careful not to overmix. Fold in apple pieces.

Transfer batter to the prepared loaf pan and bake until a toothpick inserted comes out clean, about 1 hour and 20 minutes. Allow to cool completely before dusting with powdered sugar, if desired.

Apple Breakfast Tea Cocktail - weekend recipe

There are many books on making Herbal cocktails, like the Drunken Botanist by Amy Stewart or Clean Cocktails by Beth Nydick and Tara Roscioli.  Each of these has great ideas for turning your garden jewels into a wonderful relaxing beverage.  After reading these I started to experiment with tastes and flavors and cocktails and mocktails and came up with quite a number of them.



One of the great ways to get the taste of herbs into a cocktail is to make a tea.  Tea Cocktails take the flavor of tea and use it to enhance a combination with alcohol.


Here are some tips for making tea cocktails

1.      Always make your tea stronger than you think necessary for cocktails. Don’t use more time to achieve this; instead, use more tea. Many people make the mistake of steeping the tea for too long to try and get more flavor. The results? Bitter, sour tea. Use more dry tea but stick with the suggested steeping times. You’ll love the power behind a tea concentrate.

2.      Be aware of balance. A stronger tea like rooibos, a tisane versus true tea, has nutty notes that beg to be enhanced by a robust spirit like bourbon or rum. On the other hand, a more delicate tea like white tea requires a spirit that won’t overwhelm it, making vodka or light rum ideal.


Apple Breakfast Tea Cocktail

English breakfast tea
Thyme
Apple juice
Whiskey
Apple, sliced thin

Brew a fresh batch of tea with added sprigs of thyme.  Chill and add equal parts clear apple juice and tea.  Pour into a balloon glass and spike each one with a shot of your favorite whiskey.  Garnish with apple wheels and sprigs of thyme.

Apple Bacon Dinner Pie - recipe theme pie



I figure by this time of the month, you are sick of fruit pie, so I thought a dinner pie might be a nice change.  This one uses apple, which is perfect for November, but also includes blue cheese and bacon.  You know what they say, everything is better with bacon.  The herbs are a savory mix that enhances and supports apple and bacon flavors.


Apple Bacon Dinner Pie

6 slices bacon

1 (8 1/2-ounce) package corn muffin mix

2/3 cup all-purpose flour

1 teaspoon paprika
1 teaspoon savory
1 teaspoon marjoram

1 egg, lightly beaten

1/4 cup 2 % reduced-fat milk

2 large Granny Smith apples, cored and thinly sliced

1/3 cup crumbled blue cheese



Directions

Preheat oven to 400F. Lightly grease 2 baking sheets.



Cook bacon in a large skillet over medium heat until crisp. Remove and drain on paper towels. Reserve drippings, and coarsely crumble bacon when cool enough to handle.


Combine muffin mix, flour, paprika, egg and milk; stir well to form a dough. Divide into 4 portions, and put 2 portions on each of the prepared pans. Press into 7-inch circles with your fingers.



Top each dough circle with a layer of apple slices, leaving a 1-inch border. Fold edges roughly around outer edges of apple slices. Brush apples and crust with bacon drippings. Bake 10 minutes. Top with blue cheese and crumbled bacon. Bake 7 minutes longer or until edges are golden brown. Cut into halves and serve warm. Serves 8.

Cheese and Potato Slab Pie - recipe theme


This recipe is great for breakfast or dinner and the crust can be made ahead, up to 2 days.




Cheese and Potato Slab Pie

For the Crust:

3 1/2 cups all-purpose flour, plus more for dusting

1 tablespoon sugar

1 teaspoon fine salt

3 sticks unsalted butter, cubed (keep cold in the freezer)

1 tablespoon white or apple cider vinegar

For the Filling:

4 tablespoons extra-virgin olive oil

1 large onion, thinly sliced

Kosher salt

4 large red-skinned potatoes (1 1/2 pounds), unpeeled

2 gala apples, unpeeled

2 sprigs fresh thyme, leaves stripped

Freshly ground black pepper

3 tablespoons breadcrumbs

5 ounces mortadella or ham, thinly sliced

10 ounces white cheddar cheese, shredded

Heavy cream, for brushing



Directions

Make the crust: Pulse the flour, sugar and salt in a food processor. Add 1 stick butter and pulse until combined. Add the remaining 2 sticks butter and pulse three times, or until the mixture resembles coarse meal. Add the vinegar, then gradually add 1/3 cup ice water through the feed tube, pulsing four times, until evenly combined. Squeeze the dough between your fingers. If it doesn't hold its shape, add up to 2 tablespoons ice water and pulse two more times (the dough should still be crumbly). Turn out onto a clean surface and press into a ball; divide in half, wrap in plastic wrap and flatten into two 1-inch-thick rectangles. Refrigerate at least 1 hour or up to 2 days.



Make the filling: Heat 2 tablespoons olive oil in a skillet over medium heat. Add the onion and cook until slightly brown, 5 to 7 minutes; season with salt and let cool. Slice the potatoes and apples very thinly; toss in a bowl with the thyme, the remaining 2 tablespoons olive oil, and salt and pepper to taste.



Line an 8-inch square baking dish with foil, leaving a 1-inch overhang on all sides. On a floured surface, roll out one piece of dough into a 12-inch square, about 1/8-inch thick. Transfer to the prepared dish, tucking the dough into the edges and corners; do not trim the overhang. Sprinkle the breadcrumbs over the dough and add the onion. Lay the mortadella on top, then sprinkle with about one-third of the cheese. Layer half of the potatoes and apples on top in a single layer; Season with salt and pepper to taste, then sprinkle with another one-third of the cheese. Top with the remaining potatoes, apples; season again and finish with cheese.



Roll the remaining dough into a 12-inch square and place on top of the filling. Press the overhang of the two crusts together, then roll the dough under itself and pinch to make a 3/4-inch-high edge. Make slits in the top crust with a knife to allow steam to escape. Refrigerate 30 minutes. Meanwhile, preheat the oven to 425 degrees F.



Bake the pie until golden brown, about 30 minutes. Reduce the oven temperature to 400 degrees F, brush the crust with cream and continue baking until crisp, about 35 more minutes. Cool 25 minutes, then lift out of the pan and slice.

Can your own Sugar-free Applesauce - Weekend Recipe



Crock Pot Applesauce - No Sugar Added































This crockpot recipe is for a homemade applesauce that you can enjoy, give as a gift and preserve through canning to enjoy in the long winter.  Apples are sweet enough no sugar need be added until you are tasting at serving time, then you can add sweetener as desired.  I make my applesauce using Backyard Patch Cinnful Dessert blend, which is my alternative to apple pie or pumpkin pie spice made with cinnamon, lemon peel, nutmeg, allspice and ginger.  It is sweeter and less sharp than traditional commercial spices -- and perfect for your holiday baking.

Crock Pot Applesauce No Sugar Added


12 Gala or Jonagold Apples (or apples of your choice) cored and peeled
2 tsp Backyard Patch Cinnful Dessert Blend (or ground cinnamon)
1 oz lemon juice
Water

Directions


Core and peel apples, slice into 8 pieces each and place all in crock pot. Add BYP Cinnful Dessert Blend, and lemon juice. Add enough water to almost cover apples. Cook on high for 4 hours or low for 6-8 hours. Unplug crock pot, remove lid and let cool for about 30 minutes. Scoop apples out with slotted spoon. Add 1/3 at a time to blender and blend to desired consistency. Repeat with the rest of the apples. Combine all of your thirds and store.  If you are going to eat it fresh do so within a month.  If you want to can the applesauce, place it back into drained crockpot and cook on high for 30 minutes to rewarm.   Scoop hot applesauce into hot pint jars, leaving 1/2-inch headspace. Wipe the rims clean, remove any air bubbles, and place your lids. Waterbath can for 15 minutes. Makes 10 servings, approximately 3/4 cup each or cans 4 to 5 pints.
