Squash and Bean Soup - Weekend Recipe

This soup is a bit different because you serve it over couscous to give a unique texture.  I like how you can make it in the crockpot.  I like dry beans so I pull them out and soak them overnight and use 1 cup cannellini beans and 1 cup soaked chickpeas (garbanzo beans.)



Squash and Bean Soup

  • 1 tsp ground coriander
  • 1 piece fresh ginger
  • kosher salt
  • Pepper
  • 1 small onion
  • 1 small butternut squash
  • 2 clove garlic
  • 6 sprigs fresh thyme
  • 1/2 cup couscous
  • 1/4 cup dried apricots
  • 1/4 cup roasted pistachios
  • 1 scallion
  • 1/4 cup fresh flat-leaf parsley
  • 1 can cannellini beans
  • 1 can chickpeas

DIRECTIONS

1.      In a 5- to 6-quart slow cooker, whisk together the coriander, ginger, 2 cups water, 1 teaspoon salt and 1/2 teaspoon pepper. Add the onion, squash, garlic, and thyme and cook, covered, until the squash is tender, 3 hours on high or 5 hours on low.

2.      Twenty minutes before serving, place the couscous in a medium bowl. Add 1 1/4 cups hot tap water, cover and let sit for 15 minutes. Fluff with a fork and fold in the apricots, pistachios, scallion, parsley, and 1/4 teaspoon each salt and pepper.

3.      In a medium bowl, mash half the cannellini beans with a fork until fairly smooth. If the slow cooker is on low, turn it to high and stir in the mashed beans, then add the remaining beans and chickpeas and cook until heated through, about 3 minutes. Ladle the soup into bowls and top with the couscous mixture.

Vegan Summer Squash and Pesto Soup - Recipe Theme

If you have a few leftover summer squash as the frost moves in, this is a great soup to help use them up.  You can also use your other garden produce to make this flavorful and unique soup that can use up all your remaining fresh basil. This is another crock pot recipe, can you tell where my cooking of soups tends to gravitate?  Hubby does not like to make soup and I don’t like to be in the kitchen for long periods which makes crockpot soups my favorite.  


The butter-based pesto topping is what makes you love this soup as one last time to enjoy the flavors of summer. And the butter is great on pasta, rolls, and steamed vegetables too! Leftovers of both can be frozen. 

Vegetable Soup with Pesto Butter

  •  1 large onion, chopped
  • 3/4 pound new potatoes (1-inch diameter), halved
  • Salt and pepper
  • 2 summer squash (8 oz. each), halved lengthwise and sliced crosswise into 1/3-inch pieces
  • 1/2 pound green beans, halved
  • 1/2 pound sugar snap peas
  • 1 quart vegetable broth or stock
  • 1 cup (packed) fresh basil
  • 1 small clove garlic, peeled
  • 1/4 cup finely grated parmesan
  • 4 tablespoons butter or vegetable butter substitute
  • 3 ears corn, kernels cut off (about 1 1/2 cups)
  • 1 large tomato, diced

Directions:

Layer the onion and potatoes in a large, lined slow cooker; season with salt and pepper. Add the squash, green beans, snap peas and broth. Cover and cook until the potatoes and squash are soft and the beans and peas are crisp-tender, about 2 hours on high or 3 hours on low.

Meanwhile, make the pesto butter: Using a food processor, puree the basil and garlic until finely chopped. Add the parmesan, butter/butter substitute, 1/2 tsp. salt and 1/4 tsp. pepper. Process until the butter comes together in a ball. Transfer to a small bowl.

Stir the corn and tomato into the finished stew; season. Top each serving with pesto butter.

Unusual Topping Pizza with herbs and Summer Squash - Weekend Recipe


Today’s pizza leans toward the traditional style with a slight twist, using a tomato-based sauce as the base and broccoli as an unconventional, but tasty, topping. 


Pizza with Summer Squash
MAKES ONE 12-INCH PIZZA
1 cup prepared marinara or spaghetti sauce

2 to 3 tablespoons tomato paste (depending on how thick you like your sauce)
1 (10-ounce) prepared pizza dough or crust
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
1 summer squash, sliced 1/3-inch-thick (about 1 cup)
1/2 cup diced red onion
1 tablespoon snipped fresh rosemary
1 to 2 teaspoons snipped fresh summer savory
1 to 1 1/2 cups chopped broccoli florets (chop into 1/2-inch pieces)
4 to 6 slices turkey bacon, cut into 1-inch pieces then cooked (optional)


Directions:
Preheat oven to 475 degrees. Combine marinara sauce and tomato paste. Spread sauce evenly over crust, leaving a 1/2-inch border. Sprinkle with mozzarella cheese and distribute small dollops of ricotta cheese evenly over pizza.
Arrange squash slices on pizza as you would for pepperoni. Sprinkle red onion, rosemary and summer savory over the summer squash. Top with chopped broccoli and cooked bacon. Bake for 12 to 16 minutes or until crust is golden and cheese is bubbly.

Squash and Potato Casserole

This side dish would be great for Thanksgiving.  It can be made ahead baked for 30 minutes, refrigerated and finished cooking for the last 45 minutes, the next day.  Might save some oven space on the big day!

Squash and Potato Casserole

1-2 russet potato, peeled and cut in wedges
1 zucchini, peeled and cut in wedges
1 yellow squash, peeled and cut in wedges
1 white onion, peeled and cut into rings
4-5 slices of fried bacon, crumbled up
BYP Vegetable Seasoning (or seasoning blend of your choice) 
1/2 cup butter or margarine, chopped in slices
Salt and pepper

Directions
Preheat oven to 350 degrees. Use a 3-4 inch tall casserole dish. Layer potatoes, yellow squash, onion (2-4 rings per layer), seasonings, bacon crumbles, butter slices (4-5 per layer). Repeat same layering only using zucchini squash in place of yellow squash. Cover with tin foil. Bake for 1 hour and check. Bake for another 15 minutes if needed.

Squash Lasagna

As a side dish or as a main dish this is a tasty combo of herbs and vegetables that is rich and flavorful. The colors make it a great Halloween dish and you can make it ahead.




Squash Lasagna
1 small eggplant
2 small zucchini
2 small yellow summer squash
4 plum tomatoes
1 large sweet onion
1/2 cup butter, melted
1/2 cup minced fresh parsley
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon each dried thyme, oregano, tarragon and basil
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon pepper
1 cup (4 ounces) shredded part-skim mozzarella cheese

Directions

Cut vegetables into 1/4-in. thick slices. In a greased 13-in. x 9-in. baking dish, layer the eggplant, zucchini, squash, tomatoes and onion. In a small bowl, combine the butter, parsley, garlic and seasonings; pour over vegetables. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 35 minutes. Sprinkle with cheese. Bake 10-15 minutes longer or until cheese is melted. Serve with a slotted spoon. Yield: 13 servings (3/4 cup each).

Yellow Squash Galette Pie

There is nothing worse than picking all the recipes, writing all the posts and then forgetting to make them live, so here are all the recipes for this point in the month that all went up on one day.  Sorry!


This recipe can make an appetizer or a side dish.  It uses pesto as the flavoring, which is a wonderful item to craft this time of time.

Yellow Squash Galette Pie

2-3 small yellow squash
1/3 cup ricotta
3 tablespoons pesto (see a quick recipe here)
Olive oil
Salt
1 sheet puff pastry

Directions
Cut squash into very thin circles. Lay a sheet of puff pastry on a greased baking sheet & top it with a layer of squash rings, then add ricotta and pesto and more squash circles.  Pinch the edges of the pastry upward to form sides. Drizzle the pastry with olive oil and salt.  Bake the galette for 15-20 minutes at 400F until the edges are golden. Serve hot.
