Summer Cooking with Herbs: Seasonal Dishes

Make the most of summer produce with fresh herb recipes!

Summer is peak herb season, with gardens overflowing with lush, aromatic leaves and Farmer’s Markets brimming with locally grown produce. Cooking with fresh herbs is the best way to highlight seasonal produce and add layers of bright, unforgettable flavor to every meal.

Herb-Forward Salads and Dressings

  • Add chopped parsley, dill, basil, or chives to green salads.
  • Whip up an herby vinaigrette: olive oil, vinegar or lemon juice, Dijon, fresh herbs.
  • Quick Herb Vinaigrette

    • 3/4 cup light flavored oil
    • 1/4 cup herb or rice vinegar (sweet and savory work well)
    • 1 teaspoon Dijon mustard
    • 1/2 teaspoon honey
    • 1 tablespoon chopped fresh herbs (savory or sweet)
    • Salt and pepper to taste

Place all the ingredients in a mason jar and shake vigorously until emulsified. Serve immediately. Makes 1 cup. Store any leftovers in the refrigerator for up to a week.

 

  • Toss tomato, cucumber, and feta with oregano and mint for a Mediterranean touch. Or add our Greek Blend Seasoning.
  • which is perfect on tomatoes.

Grilling with Fresh Herbs

  • Make marinades with rosemary, thyme, and sage for meats and veggies.
  • Easy Marinade

    • ½ cup olive oil
    • 1/8 cup cider vinegar  
    • 2 clove garlic, crushed 
    • 1 bay leaf 
    • 1 Tbls. finely chopped onion
    • ½ tsp. brown sugar
    •  ½ tsp. fennel seed
    •  ½ tsp. salt 
    • 1/8 tsp. pepper 
    • 2 tsp. fresh, 1 tsp dried herbs of your choice

Combine ingredients in a jar or cruet and shake well. Pour over cooked or uncooked vegetables, pasta salad, or chicken or beef.  Allow to marinate 2 to 8 hours, then grill, bake or broil as desired.

  • Create herb butters with parsley, garlic, and chives to melt over grilled corn or steaks. Check out our previously posted herb butter recipes.
  • Use sturdy herbs like rosemary or thyme as skewers for kebabs.

Light, Summery Pastas and Grain Bowls

  • Toss pasta with olive oil, cherry tomatoes, basil, and mozzarella.
  • Make tabbouleh with fresh parsley and mint, bulgur, lemon juice, and tomatoes.
  • Add chopped herbs to rice or quinoa salads with summer vegetables,
  •  Tabbouleh
    • 1 cup bulghur wheat
    • 1 1/2 cups boiling water
    • 1/4 cup freshly squeezed lemon juice (2 lemons)
    • 1/4 cup good olive oil
    • 3 1/2 teaspoons kosher salt
    • 1 cup minced scallions, white and green parts (1 bunch)
    • 1 cup chopped fresh mint leaves (1 bunch)
    • 1 cup chopped flat-leaf parsley (1 bunch)
    • 1 hothouse cucumber, unpeeled, seeded, and medium-diced
    • 2 cups cherry tomatoes, cut in half
    • 1 teaspoon freshly ground black pepper

Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour. Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

Lemony Italian Salad - Weekend Recipe

Rosemary is the star flavor in this Italian lentil salad. Use fresh rosemary for the perfect flavor, or cut the amount by half if you are using dry and be sure to crumble or crush the dry to release the aroma.



Lemony Italian Salad

  • 2/3 cup dry lentils
  • 1 1/3 cups water
  • 5 plum tomatoes, chopped (about 1 ¾ cups)
  • 3/4 cup finely shredded parmesan (3 oz)
  • 3/4 cup finely shredded asiago (3 oz)
  • 2 cups baby spinach leaves, or torn spinach
  • 8 ounces thinly sliced prosciutto or ham (about 12 slices)
  • 1/3 cup vinegar
  • 1/3 cup olive oil
  • 2 Tbls lemon juice
  • 1 Tbls Dijon style mustard
  • 2 tsp snipped fresh rosemary
  • 1 tsp oregano
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions:

Rinse lentils; place in a small saucepan with water. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until just tender. Drain and chill.

Arrange tomatoes, cheeses, spinach, lentils, and prosciutto in rows on a large square or rectangular platter, or a serving dish.

For dressing, in a screw-top jar combine vinegar, olive oil, lemon juice, mustard, rosemary, salt, and pepper. Cover and shake well. Drizzle over salad. Makes 8 to 10 servings.

Cucumber Salads for the Weekend - Weekend Recipe

Today I have two cucumber salad recipes to share.  Both are quick and easy and will help use up a cucumber surplus, or just those two extra you bought at the farmer’s market! You can peel or score the cucumbers with a fork if you want a bit of green.

Sweet, yet tart Cucumbers
The first is a slightly sweet cider vinegar dressed cucumbers that is both sweet and sour. It came from The Little Herb Shop in Pennsylvania.
3 medium cucumbers
¼ cup sugar
½ cup cider vinegar
¼ cup water
½ tsp salt
¼ tsp black pepper
1 Tbsp minced salad burnet (or parsley)

Directions: 
Slice the cucumbers thinly and layout on paper towel to blot dry.  Combine sugar, vinegar, water, salt, pepper and parsley.  Add cucumbers and toss lightly.  Chill for several hours before serving.

Cucumbers with Dill
This recipe is from Alloway Gardens and Herb Farm also in Pennsylvania.  It is one of my favorite for creamy dill salad.

2 cups thinly sliced cucumbers
½ cup sour cream
2 tsp vinegar
½ tsp sugar (I used a sugar substitute)
2 tsp chopped fresh chives
2 tsp chopped fresh dill

Directions:
Mix all items together in a bowl and chill for several hours before serving.

Herb and Flower, Tomato and Cucumber Salad

The heat is finally taking out the last of the pansies I started with in April.  We have many shady spots in the yard so I can keep pansy’s happy for quite a long time.  But when Illinois gets into patterns of 90-degree heat for days at a time, no amount of water will keep those pansies happy.  So this morning before the humidity rose and I had to turn on the air again, I went out and harvested a fist full of pansy flowers to add to a cucumber and tomato salad.

We have a few tomatoes that are nearing the end of shelf life so tossing with oil and vinegar will keep them fresher and allow me to eat more than I would in a sandwich.  Since today is my day to do all the cooking so the hubby can work on a project, I thought this great salad with a side of grilled chicken leftovers would be a great lunch.

I used a vinegar I made with pansies and violas back in April.  It is a lovely red color and looks great with red tomatoes.  The flowers I used: lavender, sage, oregano, borage, bee balm, calendula, pansy, thyme and some chamomile.

I will share the crockpot chicken stew I created for dinner later.


Herby Tomato and Cucumber Salad

2 medium-sized ripe tomatoes cut in ¾ inch chunks
1 medium onion, cut in ¼ inch chunks’1 medium cucumber cut in ½ inch chunks
8 oz. of mozzarella cheese
3 Tbls olive oil
3 Tbls Herb vinegar (chive, basil, or flower)
1/3 cup chopped fresh herb flowers, oregano, chive, basil or any combo of savory herb flowers.
A few herb flowers for garnish

calendula, sage, thyme. pansy (top lft to rt)
lavender, borage, oregano, chamomile, bee balm (bottom lft to rt)
                                     
Toss together, tomatoes, onions, cucumbers, and cheese.  Drizzle with oil and vinegar.  Toss.  Add herb flowers and toss well.  Refrigerate for one hour before serving.  Garnish to with fresh herb flowers.

Poppy Seed Salad - Weekend recipe

This is a great recipe for a hot day.  You can add some chunks of cooked chicken to make this into a full meal salad. 

Poppy Seed Salad
1/2 cup prepared BYP Poppy Seed Dressing
1/2 cup sour cream
4 cups fresh broccoli flowerets
3 cups fresh cauliflower flowerets
1 cup cubed Monterey Jack Cheese (4 ounces)
1 cup cubed cheddar cheese (4 ounces)

Combine poppy seed dressing and sour cream in a small bowl. Combine vegetables and cheeses in a large bowl. Add Dressing; toss until well mixed.  Chill up to 6 hours.  Makes 12 servings.

Windy City Antipasto Salad - recipe theme


Another recipe in the monthly theme of appetizers this recipe, that I think was first shared by Kraft, gives you two for one.  A salad and an antipasto appetizer. It is wonderful served as a main dish or spread the ingredients over a bed of lettuce on a platter drizzled with dressing and served as an appetizer.  We recommend using Backyard Patch Italian Dressing / Marinade, but any Italian dressing will work for this recipe.


Windy City Antipasto Salad


6 ounces (2 cups) uncooked dry radiatori pasta (pasta nuggets)
radiatori pasta

1 cup broccoli florets

1 cup pitted black olives

1 cup cubed red pepper

½ cup prepared BYP Italian Dressing / Marinade

2 6-ounce jars marinated artichoke hearts, drained

8 ounces of cheddar or asiago cut in ½-inch cubes

8 ounces hard deli salami ½ inch cubes

3 slices red onion, cut in cubes
1 Tablespoon dried basil or 2 Tablespoons torn fresh



Cook the pasta according to package directions.  Rinse with cold water; drain.  In large salad bowl combine all salad ingredients; mix lightly.  Cover and refrigerate for 1 to 2 hours to blend flavors before serving.  Make 8 1 ½ cup servings as a main dish (or 12 to 18 smaller appetizer-sized servings.)
