The changing world - how herbs can help - Weekend Recipe Marinades!

 At Backyard Patch Herbs we are always trying to be helpful and informative about why herbs are so great.  I know, I think they are really great, but you only have to go as far as you want! Some of the things we are trying to do to be more helpful, is demonstrate the easy ways to use herbs at home.

Food prices are going up so we all need to get the most out of our food budget, the Herb Mixes of Backyard Patch Herbs are still a reasonable price with a long shelf life (18 guaranteed) even though they have no preservatives.  Some of the quickest and easiest to use for cooking are our rubs, marinades and dressings.

I created some fliers about how to use herb marinades. rubs and dressings which I will share over the next few days along with a few recipes.  We will start with marinades to help get the most flavor even from a cheap cut of meat.

MARINADES

            Marinades are particularly well suited to beef and game, but can be used to liven up the mild flavor of chicken and all its relatives.  Marinades are created using a blend of oil, vinegar and seasonings that is then used as a soak for the item before it is cooked.  The ratio is generally 2/3 cup oil to 1/4 cup vinegar (or lemon juice) and herbs to taste usually around 2 tablespoons of dry herbs, more if you are using fresh. Add the dry herbs to water before adding them to the vinegar and oil.  If they are fresh just chop fine. 

The high acid content of a marinade (from vinegar) helps tenderize meat as well as impart wonderful flavors.

Always prepare your marinade in a shallow non-reactive dish or pan just large enough to hold the meat comfortably.  Be sure to turn the meat so the flavor will permeate all surfaces evenly.  Very thin cuts of meat can be marinated an hour or so at room temperature, but roasts and larger cuts should stand longer, even up to two days in the refrigerator.  Just remember to turn the meat every few hours and let it return to room temperature before cooking.

When marinating chicken, a few hours to overnight is generally long enough.  Lemon is a perfect flavor for chicken so substituting Lemon juice for the vinegar is perfect.  If you are marinating fish no more than an hour in the marinade is recommended.  The soft flesh of fish easily absorbs marinade and the acid actually “cooks” the fish, so too long can damage the texture and flavor. It is recommended to place the marinade on the fish and then cook immediately in foil, or use as a baste while grilling.

Marinade on vegetables does not need as much acid as meats and can be made with just oil.  With vegetables, one can soak them in the marinade or brush it on during grilling. Adding a bit of honey can sweeten bitter vegetables.

Lemon Sage Turkey Rub

DIRECTIONS

Whisk together Lemon-Sage Marinade, lemon juice, olive oil, salt, and pepper to make a paste.  Rub mixture over and under skin of turkey. Roast as usual.



Mediterranean Marinade

DIRECTIONS

Mix together.  Use to marinade meat, poultry, seafood or vegetables.  Can also be a baste on meats and vegetables.


Grilled Provençal Shrimp Skewers

DIRECTIONS

Heat grill to medium-high. In a medium bowl, toss the shrimp with the mayonnaise, Herbs de Provence, salt and pepper.  Thread the shrimp onto 8 skewers (soaked if wooden) and grill, uncovered, until cooked through, 3 to 4 minutes per side.

Broccoli Sunflower Salad - Weekend Recipe

Sunflower seeds and broccoli go amazingly well together.  So when I saw this recipe on the Taste of Home Website, I realized this particular recipe would be great with Backyard Patch Herb Mixes, so I tied it out.


Broccoli Sunflower Salad

2 quarts water
6 cups fresh broccoli florets
3 tablespoons rice vinegar
3 tablespoons reduced-sodium soy sauce
3 tablespoons sesame oil
Sugar substitute equivalent to 1 tablespoon sugar (Like Spenda sugar blend)
1/4 cup unsalted sunflower kernels

Directions
In a large kettle, bring water to a boil. Add broccoli; cover and cook for 3 minutes. Drain and immediately place broccoli in ice water. Drain and pat dry.

In a small bowl, whisk the vinegar, soy sauce, oil and sugar substitute. Pour over broccoli; toss to coat. Cover and refrigerate for at least 1 hour, stirring several times. Just before serving, stir in sunflower kernels. Yield: 6 servings.

Fast Recipe for a Busy Weekend - Taco Salad


Brown ground beef in skillet sprayed with non-stick cooking spray. Drain fat, return beef to skillet and add Fiesta Dip Mix and water stir until well mixed. Bring mixture to a boil; reduce heat to medium-low and simmer 3 to 4 minutes or until water is evaporated.  You can add salt & pepper, if desired.


Set up a bed of lettuce on four plates. Divide ground beef among the plates and sprinkle with green onions, tomatoes, and cheese. Drizzle prepared BYP Ranch Dressing on top (see package instructions).  To add less calories you can use BYP Salsa blend prepared with fresh tomatoes instead of Ranch Dressing.

Weekend Recipe - Fun & Easy Taco Dip

There is this website called HolidayInsights.com that posts information about holidays, National days and other stuff like that.  Under the heading of Bizarre and Unique Days I often find something interesting to post about when I am at a loss for ideas.  When I was surfing there one day, I found National Tortilla Day.



Today, February 24, is National Tortilla Day.  The website did not know the origin of the day, but their guess was a tortilla company may have started it.  I thought it was an unusual day for it -- in Winter, not picnic season or a tortilla-related holiday, but who am I to judge.  I thought it was a great day to celebrate tortilla chips with a quick and easy dip, and if you are cold be sure to add some hot peppers!


Fun and Easy Taco Dip
8 ounce block of cream cheese, softened
16 ounces sour cream
2 Tbls BYP Fiesta Dip Herb Mix
1/2 of an 8 ounce bottle of taco sauce
8 ounce package shredded taco cheese (or cheddar cheese)
1 can sliced black olives
shredded lettuce
1 -2 chopped tomatoes, or 1 14 ounce can diced tomatoes, drained
Jalapenos, optional

Directions: 
In a bowl, blend softened cream cheese and sour cream with BYP Fiesta Dip Mix and mix well. Spread mixture onto a large platter. Layer on the remaining ingredients. Top with 1/2 1 bottle of taco sauce. Put in the refrigerator until ready to serve. Serve with tortilla chips.

Fast Recipe for a Busy Weekend - Salsa Meatloaf

  • 1 pound ground beef
  • 1/2 cup prepared BYP Salsa made with fresh or canned tomatoes
  • 1/2 cup unseasoned bread crumbs
  • 1 to 2 Tbls. BYP Grilled Meat Rub or Meat Seasoning Blend
  • 1/2 cup shredded Cheddar cheese
  • 1 egg, lightly beaten
  • 3 cloves garlic
  • minced dried parsley, to taste
  • salt and pepper, to taste
Preheat oven to 350 F. stir Meat Seasoning blend or Grilled Meat rub into bread crumbs.  In a large bowl combine beef, salsa, seasoned bread crumbs, cheese, egg and garlic. Add parsley, salt and pepper as desired. Bake in a 5 x 9-inch loaf pan for 45 minutes. Servings: 6 to 8.  You can pour extra salsa over the top as you bake for a bit of sweetness.

Elgin Show and Open House

I am prepping for a Show in Elgin On Saturday and my Open House at the House on Sunday so it is wild and hectic and clean, very clean!!  I am making myself stay downstairs in the herb room if I am even thinking about making a mess!  But mostly today I am packing the car and labeling the herbs!

Weekend Recipe - Herb Flower Salad


This weekend it is to be so hot and right before the grilling event of the summer, that I thought I would share a quick salad recipe with you.  You can make this as a meal by serving over a chicken breast, or as a side salad.  It is the perfect way to enjoy all the blooming flowers in your herb garden.

Herb Flower Salad with Lemon Vinaigrette

2 Nasturtium flowers and 8 leaves
6 red clover blossoms
6 to 8 young plantain leaves
2 stalks lambs quarter greens and seeds
12 pepper grass leaves
    you can use kale instead
2 purple mustard leaves
    you can use kale instead
6 catnip leaves
6 violet leaves
4 dandelion leaves

Dressing
½ cup good olive oil
¼ cup freshly squeezed lemon juice
      add about 1 to 2 tsp. lemon thyme or lemon basil, crumbled dry or minced fresh.
 
Gently toss the flowers and herbs in a bowl.  Prepare dressing by combining ingredients in a jar and shaking briskly.  Toss with greens just before serving.  To add texture to the salad, drop in some slivered almonds or plain roasted nuts.  To give it strength mince in some fresh garlic.
