Beachcomber Quiche - Weekend Recipe

When we have extra ham in the house, we use a set of ingredients we generally keep in the house to make this crustless quiche.  It is tasty, savory and you can change up the seasoning to match anything you have on hand.  In September when I am harvesting like a crazy woman and the dining room table has a mix of different herbs I brought home to dry, we make this regularly and it never tastes the same twice.

I do not know where we got this recipe, we've been making it since we moved into our first apartment and the only copies I have of it are written in my handwriting, so I may have gotten it from a friend or copied it from a cookbook I took out of the library.  The name is a bit weird too, but it is tasty.

Beachcomber Quiche
3 eggs
3 oz cream cheese
1 cup small curd cottage cheese
1/4 cup unsalted butter
1 Tbls fresh chopped herbs or 2 tsp dried herbs (a combo of dill, savory, thyme, and parsley is always good, but you can use rosemary, lemon balm, and edible flowers to make a different flavor)
1/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 cup cheddar cheese, shredded
1/2 cup cooked ham

Directions:
Beat the eggs, beat in the cream cheese, cottage cheese and butter until smooth.  Combine dry ingredients with milk in another bowl.  Stir into egg mixture, mix well.  Pour into a greased 9-inch spring form or tart pan.  Top evenly with cheddar and ham. 

Bake at 350 degrees F for 30 to 40 minutes until center is firm.  Allow to rest at least 30 minutes before cutting.  Serve warm or at room temperature.

We have cut and frozen single servings of this quiche and warmed it up in the microwave for a great quick breakfast.  You can get 6 servings, but Chas prefers 4 servings from the entire pie.
