Grilling Theme for recipes in July - Basil Grilled Chicken

You should be pinching your Basil plants to get them to become bushier and provide more leaves for the remainder of the growing season. To encourage you to do so we have a great recipe.  You need to get 3/8 cup of basil leaves together for the recipe, which can be a mix of several kinds of Basil pinches, like lemon, purple, sweet or others like Thai or cinnamon. The recipe is easy and perfect for grilling out on the deck in the warm summer sun.


Basil Grilled Chicken (serves 4)

3/4 tsp. coarsely ground pepper
4 chicken breasts, skin removed


Basting Butter:

1/3 cup butter or margarine, melted
1/4 cup chopped fresh basil


Basil Butter:

1/2 cup butter or margarine, softened
2 Tbls. minced fresh basil
2 Tbls. grated Parmesan cheese
1/4 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. pepper

Press 3/4 tsp. pepper into meaty side of chicken. Mix 1/3 cup melted butter and 1/4 cup chopped basil in bowl. Brush chicken lightly with some of the mixture. Grill chicken over medium coals for 8 to 10 minutes per side or until cooked through, basting frequently with remaining melted butter mixture. Garnish with fresh basil sprigs and serve with basil butter.

For the basil butter, mix butter, basil, cheese, garlic powder, salt and pepper in small mixer bowl. Beat at low speed until blended and smooth. Remove to serving bowl and set aside.
